Classic Niçoise Salad Recipe

Ingredients
- 1 head Boston lettuce leaves cleaned
- 300 g French green beans steamed
- 300 g fingerling potatoes halved and roasted
- 2 cups mini tomatoes halved
- 4 hard-boiled eggs peeled and halved
- 1/2 cup Farm Boy™ Jumbo Kalamata Olives
- 1 lemon cut into wedges
- 2 cans Farm Boy™ Chunk Light Tuna Skipjack in Water drained
- 8 whole anchovy fillets
- 1/2 cup Farm Boy™ Mediterranean Dressing
- pinch salt
Directions
- Arrange lettuce leaves on large platter.
- Top with green beans, roasted potatoes, tomatoes, hard boiled eggs, Farm Boy™ Jumbo Kalamata Olives, and lemon.
- Arrange Farm Boy™ Chunk Light Skipjack Tuna and anchovy fillets on the centre of the platter.
- Drizzle with Farm Boy™ Mediterranean Dressing and sprinkle with salt.
- Serve and enjoy!
