Citrus Salad with Tangy Kefir Vinaigrette

Directions

  1. In blender container place sour cream, kefir, apple cider vinegar, olive oil, feta cheese, garlic flowers, mustard, honey, salt and pepper.
  2. Process until smooth.
  3. For the salad, use a sharp knife to cut peel and pith from citrus. Slice into 1/4” rounds and arrange on platter.
  4. Sprinkle arils and mint over citrus.
  5. Drizzle with kefir vinaigrette.

  • 2 Tbsp Farm Boy™ 14% Sour Cream (500 mL)
  • 2 Tbsp Farm Boy™ Plain Kefir (250 mL)
  • 1 Tbsp Farm Boy™ Organic Apple Cider Vinegar (945 ml)
  • 1 Tbsp Farm Boy™ Portuguese Extra Virgin Olive Oil (500 ml)
  • 2 Tbsp Farm Boy™ Barrel Aged Feta (200 g)
  • 1/2 tsp Farm Boy™ Garlic Flowers (190 ml)
  • 1/8 tsp Farm Boy™ Dijon Mustard (225 ml)
  • 1-2 tsp Farm Boy™ Pure Liquid Honey (500 g) or to taste
  • 1 Tbsp salt or to taste
  • 1/4 tsp black pepper
  • 1 pink grapefruit
  • 2 Cara Cara or navel oranges
  • 2 blood oranges
  • 2 clementines
  • 1/4 cup pomegranate arils
  • 3 Tbsp mint leaves
