Citrus Salad with Tangy Kefir Vinaigrette

Ingredients
- 2 Tbsp Farm Boy™ 14% Sour Cream
- 2 Tbsp Farm Boy™ Plain Kefir
- 1 Tbsp Farm Boy™ Organic Apple Cider Vinegar
- 1 Tbsp Farm Boy™ Extra Virgin Olive Oil
- 2 Tbsp Farm Boy™ Barrel Aged Feta
- ½ tsp Farm Boy™ Garlic Flowers
- 1/8 tsp Farm Boy™ Dijon Mustard
- 1-2 tsp Farm Boy™️ Pure Liquid Honey or to taste
- 1 Tbsp salt or to taste
- ¼ tsp black pepper
- 1 pink grapefruit
- 2 Cara Cara or navel oranges
- 2 blood oranges
- 2 clementines
- ¼ cup pomegranate arils
- 3 Tbsp mint leaves
Directions
- For the Kefir Vinaigrette: In a blender, place Farm Boy™ 14% Sour Cream, Farm Boy™ Plain Kefir, Farm Boy™ Organic Apple Cider Vinegar, Farm Boy™ Extra Virgin Olive Oil, Farm Boy™ Barrel Aged Feta, Farm Boy™ Garlic Flowers, Farm Boy™ Dijon Mustard, Farm Boy™ White Liquid Honey, salt, and pepper.
- Process until smooth.
- For the Citrus Salad: Use a sharp knife to cut peel and pith from grapefruit, oranges, and clementines. Slice into ¼” rounds and arrange on platter.
- Sprinkle pomegranate arils and mint over citrus.
- Drizzle with kefir vinaigrette.
- Serve and enjoy!
