Cheesy Spinach and Sundried Tomato Frittata

Directions

  1. In large bowl, place eggs and beat them lightly.
  2. Add cottage and gruyere cheeses, spinach, sundried tomatoes, salt and pepper.
  3. Mix well and pour into oiled and heated 7” oven proof frying pan.
  4. Cook over medium high heat for 10 minutes, then bake at 350°F for 15-20 minutes, or until eggs are set and tester comes out clean.
  5. In small bowl toss arugula with dressing.
  6. Un-mold frittata and serve with arugula salad.

Ingredients

  • 5 eggs
  • 3/4 cup cottage cheese crumbled
  • 1/2 cup Farm Boy™ Farmstead Gruyere (150 g) shredded
  • 1 cup spinach chopped
  • 1/4 cup sundried tomatoes diced
  • 1/8 tsp salt
  • 1/4 tsp black pepper
  • 1 Tbsp oil
  • 1 cup baby arugula
  • 1 tsp Farm Boy™ Lemon Garlic Dressing
