Cheesy Spinach and Sundried Tomato Frittata Recipe

Ingredients
- 5 eggs
- 3/4 cup Farm Boy™ Pressed Cottage Cheese crumbled
- 1/2 cup Farm Boy™ Farmstead Gruyere shredded
- 1 cup spinach chopped
- 1/4 cup Farm Boy™ Sundried Tomatoes diced
- 1/8 tsp salt
- 1/4 tsp black pepper
- 1 Tbsp Farm Boy™ Vegetable Cooking Oil
- 1 cup baby arugula
- 1 tsp Farm Boy™ Lemon Garlic Dressing
Directions
- Preheat oven to 350°F.
- In large bowl, place eggs and beat them lightly.
- Add Farm Boy™️ Cottage Cheese, Farm Boy™️ Farmstead Gruyere, spinach, Farm Boy™️ Sundried Tomatoes, salt, and pepper.
- Mix well and pour into oiled and heated 7” oven-proof frying pan.
- Cook over medium high heat for 10 minutes, then bake for 15-20 minutes, or until eggs are set and tester comes out clean.
- In small bowl toss arugula with Farm Boy™️ Lemon Garlic Dressing.
- Un-mold frittata and serve with arugula salad.
