  • Difficulty: Easy

This unique Dutch Baby pancake comes together in a flash thanks to a blender, and the batter can even be made the night before for a speedy breakfast of brunch. Offering a beautiful presentation, you only have to top it with berries, whipped cream, or even ice cream depending on the time of day you will be serving it. Different, delicious, elegant and easy!

Directions

  1. In blender jar, place flour, milk, eggs, sugar, vanilla and a pinch of salt. Blend until completely smooth. Batter will be very runny. Refrigerate for 30 minutes and up to overnight.
  2. When ready to bake, preheat oven to 425°F. Place a 9” or 10” cast iron or oven safe skillet in the oven as it preheats.
  3. When the oven has reached temperature, remove skillet from oven and place it on the stovetop. Add butter and make sure it melts - tilt the pan so it coats evenly, including the sides of the pan.
  4. Carefully pour the cold batter into skillet, and if necessary, tilt the pan so batter is distributed evenly.
  5. Place skillet in the oven and bake until pancake is puffed and golden brown along the edges. This will take around 16-20 minutes.
  6. Serve immediately, sprinkled with icing sugar and maple syrup. Garnish with berries and orange marmalade.
