Apple and Cheese Danishes Recipe

Chef’s Tips:
* If you want, make a glaze for these by combining ½ cup icing sugar with 1 – 1 ½ Tbsp water, just enough to make it flow smoothly, then drizzle over pastries.
* These pastries can be made with other fruit like pears, peaches, nectarines, apricots, plums, or berries.
* As well as protein, the cottage cheese gives these pastries a slight tang. If you prefer, use the same amount of cream cheese instead.
* Note: This recipe requires a 15-minute chill time as well as 28-minute bake time.
Ingredients
- ½ pack Farm Boy™ Pressed Cottage Cheese at room temperature
- ¼ cup plus 1 Tbsp granulated sugar divided
- 2 Farm Boy™ Eggs divided
- 1 tsp vanilla extract
- ½ tsp Farm Boy™ Organic Ground Cinnamon
- 3 medium Royal Gala or Granny Smith apples peeled, cored, and thinly sliced
- 2 Tbsp fresh lemon juice
- 1 package Farm Boy™ Butter Puff Pastry thawed overnight in the refrigerator
Directions
- Preheat oven to 400°F.
- In the bowl of a food processor, combine Farm Boy™ Pressed Cottage Cheese, ¼ cup sugar, 1 Farm Boy™ Egg, and vanilla extract. Process until smooth and set aside.
- In a large bowl, toss sliced apples with Farm Boy™ Organic Ground Cinnamon and lemon juice.
- In a small bowl, whisk 1 Farm Boy™ Egg with 1 Tbsp water for egg wash and set aside.
- Place Farm Boy™ Butter Puff Pastry over two parchment paper sheets and roll out slightly to 10” x 10”. Cut each sheet into 4 squares.
- Divide cheese mixture amongst pastry squares, placing it diagonally in the centre, then shingle sliced apples over cheese from corner to corner. Bring opposite corners together over the apples and brush the top of one corner with egg wash, then place opposite corner over it (egg wash will help keep it together). Place pastries on sheet pans and chill for 15 minutes.
- Brush tops of pastries with egg wash and sprinkle with remaining sugar.
- Bake for 25-28 minutes, or until golden brown. Cool down before serving.
