Classic Mexican Shrimp Cocktail
Directions
- Cook shrimp in boiling salted water for 3-4 minutes, until internal temperature reaches 158°F.
- Drain and chill completely.
- In medium bowl, combine pico de gallo, ketchup, olive oil and lime juice.
- Season to taste with salt.
- Add avocado, cilantro and chilled shrimp.
- Toss gently and serve with tortilla chips.
