Classic Mexican Shrimp Cocktail Recipe

Ingredients
- 1 bag Farm Boy™ Cooked Jumbo Shrimp thawed
- 1 package Farm Boy™ Pico de Gallo
- 1/3 cup ketchup
- 2 Tbsp Farm Boy™ Extra Virgin Olive Oil
- juice of 1/2 lime
- salt to taste
- 1 large ripe avocado peeled and diced
- 2 Tbsp fresh cilantro chopped
- Farm Boy™ Natural Tortilla Chips
Directions
- Cook Farm Boy™ Raw Jumbo Shrimp in boiling salted water for 3-4 minutes, until internal temperature reaches 158°F.
- Drain and chill completely.
- In medium bowl, combine Farm Boy™ Pico de Gallo, ketchup, Farm Boy™ Extra Virgin Olive Oil, and lime juice.
- Season to taste with salt.
- Add avocado, cilantro, and chilled shrimp.
- Toss gently and serve with Farm Boy™ Natural Tortilla Chips.
