Grilled Rainbow Trout With Summer Vegetables Recipe

Enjoy this chef-inspired recipe using freshly dressed trout and colourful produce from a Farm Boy grocery store near you!
Ingredients
- 1 rainbow trout
- 1 lemon thinly sliced
- 1 lemon juiced
- 2 Tbsp extra virgin olive oil
- salt and pepper to taste
- 1 pint cherry or grape tomatoes
- 2 romaine hearts
Directions
- Start with one fresh dressed rainbow trout and cut diagonal slits along the length of the fish, about 2" apart, down to the bones. Place a thin slice of fresh lemon in each unit.
- Rub fish with extra virgin olive oil, then season generously with salt and freshly cracked black pepper.
- Remove from the grill with a long spatula and set aside for 5 minutes before serving.
- Serve with a salad of tomatoes dressed with olive oil, fresh herbs, salt and pepper, and grilled romaine hearts drizzled with olive oil and lemon juice. Enjoy!
