Spicy Burst Tomato Pasta Recipe

Chef’s Tips:
* Feel free to use whatever pasta shape you have on hand.
* For added protein, add some cooked shrimp or scallops, or even a can of Farm Boy™ Skipjack Tuna.
* For a more pronounced tomato flavour, add 1 Tbsp Farm Boy™ Organic Tomato Paste when you add the crushed chili peppers.
Ingredients
- ¼ cup Farm Boy™ Extra Virgin Olive Oil plus more for garnish
- 3 cloves garlic minced
- 3 Farm Boy™ Anchovy Fillets, minced, or 1 Tbsp Farm Boy™ Anchovy Paste
- 1 tsp Farm Boy™ Crushed Chili Peppers or minced jalapeño pepper or more to taste
- 3 cups cherry or grape tomatoes half of them halved
- zest and juice of 1 lemon
- ½ pack Farm Boy™ Linguine
- ½ cup Pecorino Romano or Parmigiano Reggiano cheese, grated plus more for garnish
- salt and pepper to taste
- 1 cup fresh basil leaves plus a few leaves for garnish
Directions
- Bring a large pot of salted water to a boil. Add the Farm Boy™ Linguine and cook according to the package directions until the pasta is just al dente. Save 2/3 cup of the pasta water, then drain pasta.
- Heat Farm Boy™ Extra Virgin Olive Oil in a large skillet over medium-high heat and cook garlic until it starts to brown around the edges, about 2 minutes.
- Add Farm Boy™ Anchovy Fillets and Farm Boy™ Crushed Chili Peppers and cook for another minute.
- Add tomatoes and ½ tsp salt. Cook until tomatoes begin to burst, about 7-8 minutes.
- Add lemon zest and juice, cooked pasta, and ½ cup of the pasta water to the skillet. Toss well.
- Mix in Pecorino Romano cheese and additional pasta water, if needed, to make a sauce.
- Stir in fresh basil and season with salt and pepper to taste.
- Serve, garnished with more basil leaves, more Pecorino, and a drizzle of Farm Boy™ Extra Virgin Olive Oil.
