Chicken and Black Bean Tostadas Recipe

* Optional but delicious toppings include sliced avocado and sour cream.
* For a vegan meal, simply omit the chicken and use vegan cheese.

Ingredients
- 8 Farm Boy™ Yellow Corn Tortillas
- 1/3 cup Farm Boy™ Virgin Sunflower Oil divided
- ½ cup onion diced
- 1 can Farm Boy™ Organic Black Canned Beans (398 ml)
- 2 boneless, skinless chicken breasts cooked and diced
- 3 cups lettuce shredded
- 1 cup Farm Boy™ Pico de Gallo
- 1 cup Farm Boy™ Barrel Aged Feta or Farm Boy™ Cotija crumbled
- 1 jalapeño pepper sliced thinly
- ¼ cup cilantro leaves for garnish
Directions
- In medium frying pan, heat ¼ cup Farm Boy™ Virgin Sunflower Oil and fry Farm Boy™ Yellow Corn Tortillas, two at a time, until crispy, about 2-3 minutes per side. Remove to a towel lined tray and reserve.
- Once tortillas are done, add remaining oil and cook onion until translucent, 2-3 minutes.
- Add Farm Boy™ Organic Black Beans with their liquid and mash until smooth, about 2 minutes. Cook until warmed through.
- Spread beans on tostadas, then top with lettuce, chicken, Farm Boy™ Pico de Gallo, Farm Boy™ Barrel Aged Feta or Farm Boy™ Cotija , jalapeño slices, and cilantro leaves.
