Mexican Style Corn Ribs Recipe

Corn “ribs” became a trend on Tik Tok in the last couple of years, so we were curious to make some. You have probably heard about Mexican Style Elotes, an iconic street food. This recipe is inspired on that crave-worthy treat and we think they are absolutely delicious, making a great addition to your summer gatherings.

The hardest part of this recipe is cutting the corn into 4 long pieces, so use your largest, sturdiest knife to carefully but forcefully cut into the cobs. The easiest way to do it is to stand the cobs on their wider end and start from the thinner end. First cut them in half, then once again to make long quarters. If you prefer to make smaller ribs, break the cobs in half first, then cut the same way as the large ones. Once they’re cut, brush with seasoned mayo before cooking – and make sure you brush the cut edges as well.

We made our recipe using an air fryer, but if you don’t have one you can grill them by preheating the grill to medium-high; place corn ribs on the greased grill and cook for 8-10 minutes, then turn and cook for another 5-8 minutes, until kernels are tender and ribs curl. If you prefer to use the oven, bake at 375°F for about 20-25 minutes.

Mexican street corn is always slathered with mayonnaise, sprinkled with powdered chili, and garnished with dry salty cheese, but our version is served with Chipotle Mayo as a fun dipper. The final touch is a squeeze of fresh lime juice for the best treat!
