We are all about breakfast sandwiches, and on that topic, what could be more Canadian than a sandwich featuring maple syrup and peameal bacon? We have put them together in this epic breakfast sammie – you may require a knife and fork, but it will be delicious!
Our peameal bacon cooks quickly and adding maple syrup to it gives it a sweetness that complements it very nicely. Add some marble cheddar, a fried egg with a runny yolk, fresh lettuce and tomato on a brioche bun smeared with Dijon mayonnaise and you’ll be off to a great start off your day!
Directions
- In medium frying pan, heat 1 Tbsp oil over medium heat and cook peameal bacon, 2-3 minutes per side, until it starts to brown.
- Drizzle in maple syrup and cook for another 2-3 minutes.
- Place cheese slices over peameal bacon and let it melt.
- In a separate skillet, fry eggs to your desired doneness.
- Spread mayonnaise on both sides of the toasted buns.
- Place lettuce on the bottom buns and top with bacon, tomato slices and egg.
- Serve immediately.

- 2 eggs fried
- 2 Farm Boy™ Brioche Hamburger Buns 4's (4 x 57g) toasted
- 4 Tbsp Farm Boy™ Dijon Mayonnaise
- 4 slices vine ripe tomato
- 2 leaves leaf lettuce
