Macerated Berries & Cream

When summer berries are at their peak, we don’t need complicated recipes to make them shine. Macerating berries with a bit of sugar and orange juice brings out their flavour. Serve with a slice of our Lemon Thyme Loaf Cake and a dollop of vanilla whipped cream for a simple, yet sophisticated dessert.
Ingredients
- 4 cups fresh assorted berries divided
- 1/4 cup sugar or more to taste
- 2 Tbsp Farm Boy™ Orange Juice
- 3/4 cup whipping cream chilled
- 1 tsp vanilla extract
- 3-4 Tbsp sugar or more to taste
- 1 Farm Boy™ Lemon Thyme Loaf Cake
Directions
- In a large bowl, combine 1 cup berries with sugar and Farm Boy™ Orange Juice.
- Mash and stir berries until sugar dissolves.
- Gently fold in remaining berries.
- Let sit, stirring occasionally, until berries release their juices, between 30-60 minutes.
- In medium bowl, combine chilled whipping cream, sugar, and vanilla.
- Using a hand or stand mixer, whisk until soft peaks form.
- Serve berry mixture over slices of Farm Boy™ Lemon Thyme Loaf Cake.
- Top with dollop of whipped cream and enjoy!
