Macerated Berries & Cream

When summer berries are at their peak, we don’t need complicated recipes to make them shine. Macerating berries with a bit of sugar and orange juice brings out their flavour. Serve with a slice of our Lemon Thyme Loaf Cake and a dollop of vanilla whipped cream for a simple, yet sophisticated dessert.


Courses: Desserts & Treats


  1. In a large bowl, combine 1 cup berries with sugar and orange juice.
  2. Mash and stir berries until sugar dissolves.
  3. Gently fold in remaining berries.
  4. Let sit, stirring occasionally, until berries release their juices, between 30-60 minutes.
  5. In medium bowl, combine chilled whipping cream, sugar, and vanilla.
  6. Using a hand or stand mixer, whisk until soft peaks form.
  7. Serve berry mixture over slices of loaf cake.
  8. Top with dollop of whipped cream and enjoy!


  • 4 cups fresh assorted berries divided
  • 1/4 cup sugar or more to taste
  • 2 Tbsp Farm Boy™ Organic Orange Juice (1.75 L)
  • 3/4 cup whipping cream chilled
  • 1 tsp vanilla extract
  • 3-4 Tbsp sugar or more to taste
  • 1 Farm Boy™ Lemon Thyme Loaf Cake (450 g)
