When summer berries are at their peak, we don’t need complicated recipes to make them shine. Macerating berries with a bit of sugar and orange juice brings out their flavour. In a large bowl, combine 1 cup berries with sugar and orange juice.
Mash and stir berries until sugar dissolves.
Gently fold in remaining berries.
Let sit, stirring occasionally, until berries release their juices, between 30-60 minutes.
In medium bowl, combine chilled whipping cream, sugar, and vanilla.
Using a hand or stand mixer, whisk until soft peaks form.
