Tip: The essence of this recipe is that it has spicy, pickly, bitter and sweet ingredients all in balance. You can substitute almost any ingredient as long as the balance of flavours work.

Directions

  1. Add all the ingredients into a large salad bowl and toss to combine.

Ingredients

  • 350g Radicchio chopped
  • 250g Endive thinly sliced
  • 1/2 Red Onion thinly sliced
  • 2 Vine Tomatoes diced
  • 1/2 cup Basil roughly chopped
  • 1 can (398 ml) Farm Boy™ Organic Chickpeas (398 ml) drained and rinsed
  • 1/2 cup Pepperoncini sliced
  • 1/2 cup Farm Boy™ Spicy Pickled Eggplant (500 ml)
  • 1/2 cup Pitted Kalamata Olives chopped
  • 100g Provolone Cheese diced
  • 125g Hungarian Salami diced
  • 1/4 cup Lemon-Garlic with Honey Dressing
