Chipotle BBQ Chickpea Sandwiches with Pineapple Salsa Slaw

Serve with Farm Boy™ Fresh Pickles.

Directions

  1. Pour the chickpeas into a bowl. Mash the chickpeas with a potato masher or fork. A combination of chunky bits and smooth bits is perfect.
  2. Add the red onion, cilantro,  chipotle bbq sauce and mayonnaise and mix to combine.
  3. In a separate bowl mix together the coleslaw and pineapple salsa.
  4. Split each croissant bun in half and toast.  Top each with some chickpea mixture and top with some pineapple coleslaw mix.

  • 2 cans (398ml) Farm Boy™ Organic Chickpeas (398 ml) drained and rinsed
  • 1/2 cup red onion diced
  • 1/2 cup fresh cilantro chopped
  • 1/2 cup Farm Boy™ Chipotle BBQ Sauce
  • 1/4 cup Farm Boy™ Light Mayonnaise
  • 4 cups Farm Boy™ Crunchy Napa Blend
  • 1 container (225g) Farm Boy™ Pineapple Salsa
  • 6 Farm Boy™ Croissant Buns
