Chipotle BBQ Chickpea Sandwiches with Pineapple Salsa Slaw

Serve with Farm Boy™ Fresh Pickles.

Directions

  1. Pour Farm Boy™ Organic Chickpeas into a bowl. Mash the chickpeas with a potato masher or fork. A combination of chunky bits and smooth bits is perfect.
  2. Add the red onion, cilantro, Farm Boy™ Chipotle BBQ Sauce, and mayonnaise. Mix to combine.
  3. In a separate bowl, mix together coleslaw and Farm Boy™ Pineapple Salsa.
  4. Split each croissant bun in half and toast.
  5. Top each with some chickpea mixture and pineapple-coleslaw mix.
  6. Serve and enjoy!

  • 2 cans Farm Boy™ Organic Chickpeas (398 ml) drained and rinsed
  • 1/2 cup red onion diced
  • 1/2 cup fresh cilantro chopped
  • 1/2 cup Farm Boy™ Chipotle BBQ Sauce (330 ml)
  • 1/4 cup light mayonnaise
  • 4 cups coleslaw
  • 1 container Farm Boy™ Pineapple Salsa (225 g)
  • 6 croissant buns
