This savoury bite-sized hors d’oeuvre may be your new go-to! Tender mushrooms, Farm Boy™ Organic Old Cheddar, Farm Boy™ Sundried Tomatoes, crispy Farm Boy™ Panko Breadcrumbs – there’s a lot to love.

Directions

  1. Preheat oven to 375°F.
  2. In medium bowl, toss mushrooms with 3 Tbsp Farm Boy™ Extra Virgin Olive Oil, salt, and pepper.
  3. Arrange hollow-side up on parchment covered baking sheet.
  4. Place a cube of Farm Boy™ Organic Old Cheddar Cheese in each mushroom cavity.
  5. In small bowl, combine Farm Boy™ Panko Breadcrumbs, Farm Boy™ Sundried Tomatoes, Farm Boy™ Garlic Flowers, Parmigiano Reggiano, and remaining 1 Tbsp Farm Boy™ Extra Virgin Olive Oil.
  6. Divide panko mixture amongst mushrooms, mounding over cheese.
  7. Bake for 20-25 minutes, or until mushrooms are soft and topping is golden brown.
  8. Serve, sprinkled with chopped parsley.

Ingredients

  • 450 g medium white or cremini mushrooms stems removed
  • 4 Tbsp Farm Boy™ Extra Virgin Olive Oil (1 L) divided
  • salt and pepper to taste
  • ½ cup (100 g) Farm Boy™ Organic Old Cheddar Cheese (200 g) cut into small cubes
  • 1 tsp Farm Boy™ Garlic Flowers (190 ml)
  • 1/2 cup Farm Boy™ Panko Breadcrumbs (227 g)
  • 2 Tbsp Farm Boy™ Sundried Tomatoes (212 ml) minced
  • 3 Tbsp Parmigiano Reggiano cheese grated
  • 2 Tbsp parsley chopped, for garnish
