Apple Pancakes with Warm Apple Cider Sauce

Chef’s Tips:
* This makes a very thick batter, yielding thick pancakes. If you like thinner pancakes, increase the amount of milk to 1 ½ cups.
* We like to use unpeeled apple to add more fibre. For a softer texture, peel the apple before adding to the batter.
* If you have leftovers, these pancakes freeze beautifully, just make sure to wrap them well.
Ingredients
- Apple Cider Pancakes
- 2 cups Farm Boy™ Pancake Mix
- ½ tsp Farm Boy™ Organic Ground Cinnamon
- 1 ¼ cup Farm Boy™ Organic 3.25% Milk
- 1 cup finely chopped apple
- ½ tsp vanilla extract
- Apple Cider Sauce
- 2 cups Farm Boy™ Apple Cider
- 1/3 cup sugar or to taste
- 4 tsp Farm Boy™ Cornstarch
- 1 Farm Boy™ Cinnamon Stick
- 1 Tbsp butter
Directions
- Preheat oven to 300°F.
- In a medium bowl, combine Farm Boy™ Pancake Mix, Farm Boy™ Organic Ground Cinnamon, and Farm Boy™ Organic 3.25% Milk.
- Stir in apple and vanilla and mix to combine.
- Preheat griddle or nonstick pan over medium heat. Portion batter using a ¼ cup measure and cook for 2-3 minutes, until golden underneath.
- Flip and press gently; cook until the second side turns golden brown, about 2 minutes. As pancakes are cooked, transfer them to a sheet pan and keep them warm in the oven.
- Meanwhile, in a small saucepan, whisk Farm Boy™ Apple Cider, sugar, and Farm Boy™ Cornstarch until smooth. Add Farm Boy™ Cinnamon Stick. Bring to a boil and whisk until thick, about 5 minutes.
- Add butter and stir until melted. Discard cinnamon stick.
- Serve pancakes drizzled with warm syrup.
