Vegetable Paella

Vegetable Paella


  • Serves: 2-4

  • Difficulty: Easy

Directions

  1. In paella pan (or 10” frying pan) heat olive oil from kit and cook onion and bell peppers until softened.
  2. Add tomatoes and cook until they break up, about 5 minutes.
  3. Add rice and seasoning from kit and cook for 2 minutes.
  4. Add water and bring liquid to a boil. Cook, uncovered, over medium high heat for 10 minutes.
  5. Add broccoli, cauliflower, artichoke hearts and green beans and turn heat down to simmer.
  6. Cook for another 10 minutes. Turn off heat and add peas.
  7. Cover with foil and let rest for 5-10 minutes.
  8. Garnish with parsley. Serve with lemon wedges.

  • 1 pack Farm Boy™ Vegetable Paella Kit (256 g)
  • 1/2 cup Onion diced
  • 1/2 cup Red Bell Pepper diced
  • 1/2 cup Yellow Bell Pepper diced
  • 1/2 cup Green Bell Pepper diced
  • 1 Roma Tomato (about 1/2 cup)
  • 3 cups Water
  • 3/4 cup Broccoli Florets
  • 3/4 cup Cauliflower Florets
  • 1/2 cup Farm Boy™ Marinated Artichoke Hearts
  • 1/2 cup Green Beans 1" pieces
  • 1/3 cup Green Peas
  • 1/4 cup Parsley Leaves
  • Lemon Wedges for serving
