Pork tenderloin lends itself very nicely to flavourful marinades, and our combination of Piri Piri seasoning with Peri Peri Grilling sauce packs a punch!
This tenderloin is very easy to make – marinate overnight in the fridge for the most flavour, then grill just before dinner. It is a quick and versatile dish that makes a great entrée, and if there are leftovers, slice thinly and make sandwiches for lunch or your next picnic.
Tip: when prepping tenderloins, we like to remove the tips, since they tend to overcook on the grill. Save those to make a stir-fry or some quick tacos.
Directions
- Using a small sharp knife, remove all silver skin from tenderloin. Trim tip and reserve for another use.
- In pyrex or plastic ziptop bag combine piri piri seasoning, lemon zest, juice and olive oil. Add tenderloin and make sure it is covered with marinade. Cover and refrigerate for 2 hours or up to overnight.
- Remove tenderloin from marinade and let rest at room temperature while you prepare the grill.
- Preheat the grill over medium heat until temperature reaches 500°F, then lower dials to medium high. Lightly grease grates and grill tenderloin for 1-1/2 - 2 minutes per side, closing the lid between flips. During the last 5 minutes, brush tenderloin with peri peri grilling sauce. Cook tenderloin for 12-15 minutes total, depending on size, until internal temperature reaches 155°F.
- Remove tenderloin from grill and place on tray, tent loosely with foil and let rest for 10 minutes, carry over temperature will increase to 160°F. Slice and serve.
