Spicy Chickpea Stew with Chorizo

Directions

  1. In medium saucepan, heat olive oil and cook onion, garlic, bell pepper and chorizo until very soft, about 10 minutes.
  2. Add chickpeas, paprika, tomatoes and salt and pepper to taste.
  3. Cook partially covered, stirring often, until mixture is thick and aromatic, 20-25 minutes. Stir in parsley.
  4. Serve with fried egg and naan.

Ingredients

  • 3-4 Tbsp Farm Boy™ Portuguese Extra Virgin Olive Oil
  • 1 cup onion diced
  • 1 garlic clove minced
  • 1 cup bell pepper diced
  • 1/2 package Farm Boy™ Hot Chorizo casing removed and diced (1 cup)
  • 2 cans Farm Boy™ Organic Chickpeas (398 ml) drained
  • 1-2 tsp Farm Boy™ Smoked Paprika
  • 1 can Farm Boy™ Whole Peeled Tomatoes diced
  • salt & pepper to taste
  • 1/4 cup parsley chopped
  • 4-6 fried eggs (optional)
  • Farm Boy™ Flame Baked Original Naan (each) to serve
