If you’re looking for a healthier way to eat spaghetti and meatballs, why not try zucchini “noodles”? Spiralized vegetables make a great substitute for pasta and zucchini goes great with our Sugo di Pomodoro! We salted our zucchini to draw out excess moisture and make for a more al dente “noodle”, but you can pan-fry or microwave your spiralized zucchini until it reaches your desired doneness.
Directions
- In large saucepan, heat oil and cook meatballs, turning until browned on all sides (about 8 minutes).
- Drain fat and add Sugo di Pomodoro to pan.
- Bring sauce to a low simmer and cover pan.
- Simmer until meatballs are cooked through and reach internal temperature of 160°F.
- While sauce is simmering, place spiralized zucchini in colander and toss with salt.
- Allow zucchini to sit 10-15 minutes, then rinse.
- Serve meatballs and sauce over zucchini.
- Garnish with cheese and serve.
