Meatballs in Tomato Sauce with Zucchini Noodles

If you’re looking for a healthier way to eat spaghetti and meatballs, why not try zucchini “noodles”? Spiralized vegetables make a great substitute for pasta and zucchini goes great with our Sugo di Pomodoro! We salted our zucchini to draw out excess moisture and make for a more al dente “noodle”, but you can pan-fry or microwave your spiralized zucchini until it reaches your desired doneness.

 

Directions

  1. In large saucepan, heat oil and cook meatballs, turning until browned on all sides (about 8 minutes).
  2. Drain fat and add Sugo di Pomodoro to pan.
  3. Bring sauce to a low simmer and cover pan.
  4. Simmer until meatballs are cooked through and reach internal temperature of 160°F.
  5. While sauce is simmering, place spiralized zucchini in colander and toss with salt.
  6. Allow zucchini to sit 10-15 minutes, then rinse.
  7. Serve meatballs and sauce over zucchini.
  8. Garnish with cheese and serve.

  • 1/2 Tbsp Farm Boy™ Extra Virgin Olive Oil (1 L)
  • 500g Farm Boy™ Sweet Italian Pork Meatballs
  • 1 container Farm Boy™ Sugo Di Pomodoro Tomato Sauce (680 ml)
  • 700g spiralized zucchini about 8 cups
  • 1/2 tsp salt
  • Parmigiano Reggiano for garnish
