Use up any of your holiday leftover mashed potatoes in this air-fryer-friendly mashed potato cake recipe! (No air fryer? No problem! This recipe can also be made in a frying pan.)
Transform your mashed potato cakes into an epic weekend breakfast with the addition of poached eggs and our new Farm Boy™ Hollandaise Sauce!
Directions
- In medium bowl, combine cold mashed potatoes, green onions, cheese, garlic flowers, paprika, and flour.
- Add beaten egg and mix to combine.
- Add salt and pepper to taste.
- Divide mixture into 12 equal portions and shape into patties.
- Spray air fryer basket with cooking spray and place patties in even layer in basket.
- Cook at 390°F for 8-10 minutes, turning halfway through, until they are golden brown.
- While cakes are cooking, fill large pot halfway with water for poaching eggs. Bring to simmer and add vinegar.
- Crack eggs into individual bowls (this helps to keep eggs intact instead of cracking directly into water).
- Gently place eggs into water and cook for 3-4 minutes.
- Use slotted spoon to remove eggs.
- Top cooked potato cakes with poached eggs, salt and pepper, and warm Hollandaise sauce.
- Garnish with chives and serve.

- 2 ½ cups Farm Boy™ Chive Mashed Potatoes cold
- ½ cup green onions sliced
- ¾ cup Farm Boy™ Organic Medium Cheddar Cheese (200 g) shredded
- 1 tsp Farm Boy™ Garlic Flowers (190 ml)
- 1 tsp Farm Boy™ Smoked Paprika
- 5-6 Tbsp flour
- 1 egg beaten
- salt and pepper to taste
- 4-8 eggs
- 1 Tbsp white vinegar
- 1 container Farm Boy™ Hollandaise Sauce warmed
- chives to garnish
