Transform your mashed potato cakes into an epic weekend breakfast with the addition of poached eggs and our new Farm Boy™ Hollandaise Sauce!

Directions

  1. In medium bowl, combine cold mashed potatoes, green onions, cheese, garlic flowers, paprika, and flour.
  2. Add beaten egg and mix to combine.
  3. Add salt and pepper to taste.
  4. Divide mixture into 12 equal portions and shape into patties.
  5. Spray air fryer basket with cooking spray and place patties in even layer in basket.
  6. Cook at 390°F for 8-10 minutes, turning halfway through, until they are golden brown.
  7. While cakes are cooking, fill large pot halfway with water for poaching eggs. Bring to simmer and add vinegar.
  8. Crack eggs into individual bowls (this helps to keep eggs intact instead of cracking directly into water).
  9. Gently place eggs into water and cook for 3-4 minutes.
  10. Use slotted spoon to remove eggs.
  11. Top cooked potato cakes with poached eggs, salt and pepper, and warm Hollandaise sauce.
  12. Garnish with chives and serve.
