Directions
Start with one fresh dressed rainbow trout and cut diagonal slits along the length of the fish, about 2" apart, down to the bones. Place a thin slice of fresh lemon in each unit.

Remove from the grill with a long spatula and set aside for 5 minutes before serving.
Serve with a salad of tomatoes dressed with olive oil, fresh herbs, salt and pepper, and grilled romaine hearts drizzled with olive oil and lemon juice. Enjoy!
