Crispy Hasselback Baby Potatoes

Loaded with organic cheddar, our Maple Wood Smoked Bacon, chives, and sour cream, these crispy potatoes are ready to bring their A-game to game day!


  1. Preheat oven to 400°F
  2. Using a sharp knife, make several cuts through each potato, leaving bottoms attached.
  3. In medium bowl, toss potatoes with olive oil, salt and pepper.
  4. Place potatoes on parchment-covered baking sheet.
  5. Bake for 20-25 minutes, or until potatoes are tender.
  6. Remove from oven and place cheese pieces in between the cuts of potatoes.
  7. Return to oven for 5-10 more minutes, until cheese has melted.
  8. Garnish with sour cream, bacon and green onions.


  • 680 g new white or red potatoes
  • 3 Tbsp Farm Boy™ Extra Virgin Olive Oil (1 L)
  • salt and pepper to taste
  • 120 g Farm Boy™ Organic Marble Cheddar Cheese (200 g) sliced thin and cut into small pieces
  • 1/3 cup Farm Boy™ 18% Sour Cream (500 mL)
  • 125 g Farm Boy™ Maple Wood Smoked Bacon cooked and crumbled
  • ¼ cup green onions or chives sliced
