Thai Noodle Salad with Peanut Sauce

Directions

  1. Cook noodles as indicated on the package. Rinse.
  2. In a small bowl, combine peanut sauce with lime juice and olive oil.
  3. Divide noodles amongst bowls.
  4. Top with chicken, carrot, red bell pepper, cucumber, green onions, and edamame.
  5. Drizzle with peanut dressing and garnish with peanuts and cilantro leaves.

Ingredients

  • 200g flat rice noodles
  • 1 container peanut Sauce
  • juice of 1/2 lime
  • 3 Tbsp Farm Boy™ Extra Virgin Olive Oil (1 L)
  • 1 boneless, skinless chicken breast poached and shredded
  • 1 small carrot julienned
  • 1 red bell pepper julienned
  • 1 small cucumber thinly sliced
  • 2 green onions thinly sliced
  • 1/2 cup Farm Boy™ Frozen Edamame Beans shelled, thawed
  • salted peanuts for garnish
  • cilantro leaves for garnish
