A Summer BBQ Menu Sure To Impress

Barbecue weather is here and we are cooking up a menu fully made on the grill! From salad to desserts, we are using a few different grilling methods to show you that your BBQ isn’t just for burgers. We are including some of our Farm Boy favourites, and a few easy recipes sure to impress anyone at your table! What can’t you do with a barbecue?

On the Menu

We’re using 3 different grilling techniques:

Straight on the grill

For the most char, that smoky BBQ flavour, and quickest cooking.

Foil packets

This is how we can grill small or thinly sliced foods, or cook things so they stay exceptionally juicy by trapping steam!

Skewers

When you want grill marks or char, but are dealing with small pieces. We see this mostly with kebabs, but there are so many more options: fruit, halloumi, small vegetables, shrimp…!

For ease of preparation, we kept the BBQ around 400 degrees for all menu items, just changing the length of time and positioning of the foods to ensure the right cooking!

Grilled Caesar Salad

  • Clean a head of romaine lettuce and slice it in half lengthwise.
  • Brush both cut sides with Farm Boy Extra Virgin Olive Oil.
  • Grill, cut side down for 3-5 minutes until lettuce shows some grill marks.
  • For dressing: thin out Farm Boy Steakhouse Garlic Dressing with a little olive oil and red wine vinegar to taste.
  • For homemade croutons: rub toasted bread with olive oil and a smashed clove of garlic, cut into cubes and broil for 5 minutes, tossing once, until crispy.
  • Drizzle grilled lettuce with dressing, sprinkle croutons, and shave parmesan over the salad before serving!

Mexican Street-Style Corn

  • Shuck corn cobs and rub with butter.
  • Grill for 15 minutes, turning occasionally.
  • Top with crumbled feta, chopped cilantro, chili powder, salt, and a big squeeze of lime!

Dilly Potatoes

  • Thinly slice potatoes (any kind work!) with a mandoline, and place in foil.
  • Drizzle with olive oil, salt, fresh dill, and onion powder.
  • Wrap up packet and place on top rack of closed BBQ for 20 minutes.

Grilled Grape & Burrata Salad

  • Marinate grapes for 1-2 hours in a mixture of 3Tbsp olive oil, 2Tbsp red wine vinegar, salt, 1 clove crushed garlic, and 1tsp brown sugar.
  • Skewer grapes, and place directly onto the grill for about 2 minutes, then flip and grill a further 2 minutes.
  • Arrange grapes around a ball of burrata or fior di latte, drizzle with the reserved dressing, and add a pinch of flaky sea salt.

Chimichurri Flattened Chicken

  • One of our Farm Boy favourites – our Flattened Chicken is perfect for grilling. Butchered for easy carving, pop it directly on the grill for 18 minutes per side, and you have a fantastic centrepiece for your meal.

Roasted Cherries with Almonds & Ice Cream

  • Pit cherries, and put in foil packet with a few knobs of butter, a squeeze of lemon juice, and a sprinkle of sugar.
  • Wrap up and place on the top BBQ rack for 20 minutes until juicy and jammy.
  • Top with slivered almonds and a big scoop of vanilla ice cream for an easy, delicious dessert.
