Place on a medium-hot oiled grill and sear for 8-10 minutes a side, giving them a quarter turn halfway through to create crosshatch marks and the internal temperature reaches 145°F(63°C) for medium-rare. Allow to rest for 10 minutes and then slice. Serve with Chimichurri Sauce.

Place on a parchment-lined baking pan in a preheated 375°F (190°C) oven for 20 minutes, flipping halfway through until the internal temperature reaches 145°F(63°C) for medium-rare.
