White Chili with Chicken

Instructions
  1. Remove all meat from chicken and shred with two forks. Set aside.
  2. In a large pot, sauté onions in olive oil over medium high heat until tender. Add garlic, chilies, hot peppers and spices, and cook for 1 minute longer.
  3. Add the chicken, beans, corn and chicken stock. Bring to a simmer, then decrease heat and continue to simmer on low for 20-30 minutes. Break up some of the beans with the back of a wooden spoon to help thicken the chili. Taste and add more salt or spices if necessary.
  4. Serve and enjoy! Top chili with cheese, green onions, and sour cream. Other garnish ideas: cilantro, chopped fresh tomato, salsa, guacamole, lime wedges or tortilla chips!
