Smoked Salmon Pasta

Instructions
  1. Heat olive oil in large saucepan and add mushrooms and sundried tomatoes. Cook over medium heat until mushrooms release all their liquid (about 5 minutes). Add cream and reduce heat to medium-low. Simmer for 15 minutes until slightly thickened.
  2. Meanwhile, cook pasta according to package instructions, making sure to under cook the pasta by one minute.
  3. During the last 5 minutes of pasta cooking, add smoked salmon, green onions, half of the parsley, salt and pepper to the cream mixture.
  4. Once the pasta is cooked, drain and add straight into the cream sauce. Toss and immediately cover and let stand for 1-2 minutes.
  5. Top with remaining parsley, pine nuts, and a sprinkle of flaked salt and cracked pepper.
