This delicious shrimp and chickpea salad will stimulate your taste buds and satisfy your hunger. Shrimp serves as a good source of protein with a boost in zinc and selenium, two minerals required for a healthy immune system. Chickpeas are a good source of plant protein that’s high in fibre and has a low glycemic index (GI). A low GI means the carbohydrate is broken down and digested slowly which is good for stabilizing blood sugar levels.   1. In a skillet, heat coconut oil at medium high heat and add minced garlic. Sauté until light golden then add shrimp and tamari sauce. Cook shrimp until white throughout. Add a squeeze of lemon juice. Let shrimp cool a little before adding to the salad to prevent lettuce from wilting.
  2. Assemble salad with romaine lettuce on the bottom and add remaining toppings; cooked shrimp, diced tomatoes, Farm BoyTM Organic chickpeas and avocado.
  3. Drizzle reduced balsamic vinegar and if desired add pepper/chili flakes to taste.
