  1. To prepare the crostini: Slice Parisian baguettes on the diagonal (1/2” thick) and brush with Farm Boy™ Extra Virgin Olive Oil. Bake at 375°F for 15 minutes, until golden and crispy.
  2. To prepare the shrimp: In large frying pan, combine oil and garlic. Cook over medium low heat until garlic is golden and very fragrant. Increase the heat and add the shrimp. Cook for 2-3 minutes, or until internal temperature reaches 165°F. Season with salt and pepper.
  3. To prepare the peppers: Halve 2 red, yellow or orange bell peppers and scoop out the seeds. Place cut side down on baking tray and roast at 400°F for 15-20 minutes, or until blistered and soft. Place in a bowl, cover with plastic wrap and let rest for 5 minutes. Peel skins off and cut into thin slices. Season with olive oil, salt and pepper.
  4. Assemble: Place brie cheese slices on crostini. Bake at 375°F for 5 minutes to melt the cheese (optional). Top with shrimp and peppers. Drizzle with olive oil. Garnish with parsley.
