Salmon with Cranberry Almond Crust

Instructions
  1. Preheat oven to 400°F. Place 6 salmon fillets on a parchment-lined baking sheet.
  2. Combine 1 cup fresh breadcrumbs, 1/2 cup chopped dried cranberries, 1/2 cup chopped toasted almonds, 1/3 cup chopped parsley, 1 Tbsp chopped thyme and 2 tsp lemon zest in a medium bowl.
  3. In medium frying pan, heat 1/4 cup olive oil and cook 1/2 cup minced shallot until soft, approximately 2-3 minutes. Turn off heat. Add bread crumb mixture and stir to combine. Season to taste with salt & pepper.
  4. Divide the mixture amongst the salmon fillets, pressing gently to adhere to the top of each fillet. Bake for 10 to 15 minutes or until the topping is golden brown and the internal temperature reaches 158°F. Serve, drizzled with olive oil, on a bed of greens tossed with Farm Boy™ Apple Cider Vinaigrette.
