Instructions
  1. Cut half of a skinless salmon fillet into ½ inch cubes and place in bowl, sitting in a larger bowl with ice in it.
  2. Cut half of the navel orange, clementine and pink grapefruit into supremes and set aside. Squeeze the juice from remaining halves over salmon, add the zest and juice of 1 lime.
  3. Thinly slice 2 Tbsp red onions and chop cilantro. Season with Farm Boy Fleur De Sel and Farm Boy Organic Black Peppercorns, to taste. Toss with salmon.
  4. Plating: Slice half an avocado, fanning slices on plate. Drizzle 1 tbsp Farm Boy Lemon Garlic Dressing over top. Spoon salmon mixture over avocado, add citrus supremes, top with shaved radish. Drizzle with Farm Boy Extra Virgin Olive Oil, garnish with organic microgreens.
