Roasted Clementine Cornish Hens

Directions

  1. Remove giblets. Rub olive oil over hens and season with salt, pepper, and Tuscan seasoning.
  2. Stuff cavities with clementines, thyme, and shallots.
  3. Roast at 450°F for 25 minutes, add wine and cook for another 15 minutes, basting often, until internal temperature reaches 165°F.
  4. Let rest 10 minutes before serving.

Ingredients

  • 2 Cornish hens 750g each
  • 2-3 Tbsp Farm Boy™ Extra Virgin Olive Oil (1 L)
  • salt and pepper to taste
  • 1 Tbsp Farm Boy™ Tuscan Bouquet Seasoning (35 g)
  • 2 clementines quartered
  • 4 sprigs fresh thyme
  • 1 shallot peeled and quartered
  • ½ cup white wine
