Roasted Clementine Cornish Hens
Directions
- Remove giblets. Rub olive oil over hens and season with salt, pepper, and Tuscan seasoning.
- Stuff cavities with clementines, thyme, and shallots.
- Roast at 450°F for 25 minutes, add wine and cook for another 15 minutes, basting often, until internal temperature reaches 165°F.
- Let rest 10 minutes before serving.
