Chef inspired recipe using haddock fillets and Farm Boy™ Kettle Cooked Potato Chips!

  1. In a large bowl, combine 1/2 cup flour, 1/2 cup cornstarch, 1 tsp baking powder and a pinch of salt and pepper. Slowly add 2/3 cup of Farm Boy™ Carbonated Water, whisking until smooth. Refrigerate for 30 minutes.
  2. Cut 900 g of fresh haddock fillets into 5” pieces. Dredge each piece in flour, shake off excess, then dip in the prepared batter.
  3. Deep fry for 4-5 minutes in hot vegetable oil, in a deep saucepan, until the internal temperature reaches 158°F and the outside is a light, golden brown colour.
  4. Drain on a paper towel lined tray then serve with Farm Boy™ Kettle Cooked Potato Chips (which we recommend warming in the oven first!) and fresh lemon wedges.
