Instructions
  1. Salmon: Remove skin from salmon fillet and slice into 1/2 inch slices. Arrange flat on a parchment lined tray. Season with a pinch of Farm Boy™ Fleur De Sel and ground Farm Boy™ Organic Black Peppercorns, and add sprigs of fresh thyme
  2. Bring 2 cups of stock to a boil, pour over the top of the salmon. Immediately cover tightly with cling wrap, place in the refrigerator for 10 minutes.
  3. Salsa: combine diced avocado, peppers, red onion, cilantro, jalapeño, garlic, lime, olive oil, fleur de sel and pepper.
  4. Artfully arrange thinly sliced cucumbers, cocktail tomatoes and jalapeño on a serving plate and drizzle with Farm Boy™ Lemon Garlic Dressing. Place salmon slices over sliced vegetables, spoon fresh salsa over salmon. Season to taste.
