Instructions
  1. Clean and de-beard mussels.
  2. Discard any mussels that do not close when lightly tapped.
  3. In large saucepan, heat olive oil and cook shallots, garlic and celery until soft, 3-5 minutes.
  4. Add tomatoes, tomato paste, thyme, salt, pepper and sugar and simmer, covered, for 20 minutes.
  5. In separate large pot, bring wine to a boil and cook mussels, covered, for 7-10 minutes, stirring once or twice, until mussels have opened.
  6. Discard any mussels that have not opened after cooking.
  7. Add cooked mussels to tomato sauce, add basil and parsley and mix well.
  8. Serve with crusty bread.
