Instructions
  1. In a medium bowl, toss leeks, grape tomatoes, garlic, parsley, chili flakes and salt and pepper with 4 Tbsp olive oil.
  2. In a small bowl, toss sliced zucchini with 1 Tbsp olive oil, salt and pepper. Season 4 haddock fillets with salt and pepper.
  3. Cut 4 pieces of parchment paper into 12” squares and fold each piece in half. Shingle zucchini slices in centre of parchment, top with haddock then with the tomato leek mixture. Drizzle with olive oil. Fold top of paper over fish; starting at one end, fold edges, pressing firmly to make a half moon shape.
  4. Place parchment packets on a tray and bake at 400°F for 14-18 minutes, until internal temperature reaches 158°F. Cut packets open and, if desired, garnish with fresh chives and lemon slices.
