Instructions
  1. Remove fish from fridge 30 minutes before cooking. Pat fish dry with paper towels; season inside and out with salt and pepper.
  2. Stuff cavity with lemon slices, parsley and oregano sprigs and rub fish generously with olive oil.
  3. Clean and oil grill very well. Preheat grill to a medium high temperature. Set fish over hot grill and cook until the bottom side is browned nicely, 7-10 minutes, depending on size of fish. Carefully turn fish and cook on the second side until skin is brown, flesh flakes easily, and internal temperature reaches 158°F.
  4. Let fish rest 5 minutes before serving. Drizzle fish with Farm Boy Extra Virgin Olive Oil and serve with Farm Boy Sundried Tomato Pesto and lemon wedges.
Recipe Notes

Use a carving fork and spatula to turn fish: insert tines of fork between grill grate and under fish, turn fish and help yourself with a spatula to catch it as you turn it. If fish skin sticks to the grates, let it cook a minute longer, until it releases easily from grill.
