Instructions
  1. Brush eggplant with olive oil and season with salt and pepper.
  2. Grill over medium low heat until soft and golden. Reserve.
  3. In large frying pan, heat 2 Tbsp olive oil and cook chicken until golden brown.
  4. Add onion, garlic and mushrooms and cook until all liquid is evaporated.
  5. Add tomato, salt and pepper to taste. Cook for 5 minutes. Let mixture cool for 10 minutes.
  6. Add ricotta cheese, Italian cheese blend and basil to chicken mixture. Mix to combine. Adjust seasoning.
  7. Place 2-3 Tbsp chicken mixture on each eggplant slice, then roll up gently.
  8. Top with warm tomato basil sauce and garnish with basil.
