"Barbecured" Salmon
Chef inspired recipe using Good Catch salmon fresh from our seafood department!

  1. Mix 4 cups brown sugar with 1/2 cup salt and spread on a tray. Place 1 salmon side, skin side down, on sugar salt mixture and use the rest of sugar salt mixture to coat the salmon completely. Cover with plastic wrap and let cure in fridge 12-24 hours.
  2. Wash sugar salt mixture off salmon and pat dry. Oil the salmon generously on both side with Extra Virgin Olive Oil.
  3. Grill over medium high heat for 3 minutes.
  4. Slide spatula between skin and flesh, and run it all along the fish to separate the skin from the flesh. Place spatula between skin and flesh, and flip salmon on to the grill, leaving the skin where it is. Cook for 3 minutes.
  5. Flip the skin and cook for 1 minute, until crisp. Remove fish from the grill and let rest for 5 minutes before serving.
Recipe Notes

Serve with grilled veggies and a fresh garden salad.
