Instructions
  1. Season veal scallopini with salt and pepper. Place two sage leaves over each piece of veal, and top with two slices of smoked ham. Secure ham on veal with toothpicks. Dredge only meat side with flour.
  2. Heat olive oil in large pan and cook meat, veal side down until lightly browned, 2-3 minutes. Flip and cook on second side for 1 minute, to brown ham.
  3. Remove meat from skillet, remove toothpicks and keep warm.
  4. Melt butter in pan and add a stem of sage. Cook for 2 minutes and add white wine. Reduce to half and add lemon juice. Season with salt and pepper.
  5. Drizzle veal with pan sauce and serve with steamed asparagus and wilted spinach.
