Instructions
  1. In a large mixing bowl, mix together diced onion, ground beef and pork and 2 cups of uncooked rice. Form into meatballs- fairly large- about the size of an ice cream scoop.
  2. In a large Dutch oven, heat 2 tablespoons of the olive oil over medium heat. Layer sliced cabbage at the bottom of the pot, add a layer of meatballs, add half the diced tomatoes, add another layer of cabbage, add half of the diced tomatoes add another layer of meatballs and so on until all meatballs and cabbage and diced tomatoes are used. This does not have to be super precise so don't worry if there's more of one than another.
  3. Once the layering has been done, pour the two jars of Farm Boy Passata over all the layers. Cover and simmer on low to medium for 30 minutes.
  4. Mix 4 tablespoons of olive oil with 2 tablespoons of smoked paprika and 1/4 cup of water and pour over top and ensure it gets incorporated throughout. Do not stir vigorously as the meatballs will fall apart. Put lid on a cook on low for an additional 30-40 minutes until meatballs are cooked through and tender.
  5. Serve in bowls with a generous dollop of sour cream and crusty bread. This is a healthy comfort food recipe that is even better warmed up the next day. Enjoy!
