  1. Pour enough olive oil to coat bottom of a large pot. Heat over medium heat.
  2. Add onion and cook for 1 minute, then add celery and stir for about 5-10 minutes.
  3. Add mushrooms and cook until mushrooms start to brown, onions are translucent and celery starts to soften.
  4. Add turkey and cook, stirring often, until no longer pink and starting to brown.
  5. Drain off any liquid left in the pot.
  6. Add garlic, salt, pepper and diced bell pepper.
  7. Stir for 2 minutes, then lower heat to medium and add the spices.
  8. Cook for 2 minutes.
  9. Add Worcestershire sauce and broth. Cook about 10 minutes, until liquid is reduced by half.
  10. Add tomatoes and simmer 15 minutes, stirring often. Add beans and simmer for about 30 minutes.
  11. Add corn and simmer 10 more minutes.
  12. Serve garnished with cheese, sour cream and hot sauce.
