  1. Bring quinoa and 2 cups of water to a boil, cover and simmer for 25 minutes.
  2. In a sauce pan heat olive oil, once hot add onions and carrots until they begin to soften, then add garlic and cook a few minutes longer.
  3. Sprinkle in flour and cook for a few minutes. Add in vegetable broth, stirring well then add tomatoes, tomato paste and maple syrup. Simmer for about 45 minutes.
  4. Puree the soup with either a hand blender or use a standing blender. Add in milk and season with pepper.
  5. Ladle out the soup and add 2 spoonful’s of quinoa per bowl, then sprinkle with feta.
