Taco Mac n Cheese

Instructions
  1. Preheat the oven to 360°F
  2. In a non stick skillet over medium heat, Brown the ground beef, add in diced green peppers, diced onion and Farm Boy™ Mesquite Seasoning.
  3. While the meat is browning cook pasta, drain and reserve.
  4. Melt butter over medium high heat in the empty pasta pot. DO NOT ALLOW BUTTER TO BURN. Once melted add the flour and whisk into a rue (paste).
  5. Add milk 1/2 cup at a time, whisking until smooth. When all the milk has been added and the sauce has thickened add in 2 cups of shredded cheddar and whisk until combined.
  6. Stir meat mixture, pasta, sour cream and diced tomatoes into cheese sauce. Once mixed spread evenly into a 9x13 casserole dish, sprinkle remaining cheese on top.
  7. Bake at 350°F for 20-30 minutes until the cheese is bubbly and the cheese sauce has "set" to the consistency of your liking.
  8. Cut the Mac n Cheese into squares. Once plated, garnish with salsa, sour cream, shredded lettuce and scallions.
Recipe Notes

Serving tip: double the recipe to make a second pan up to step number 6. Allow to cool and freeze. Thaw overnight in the fridge, pour 1 cup of milk over the thawed mixture then follow step number 7.
