Instructions
  1. Remove giblets, rub olive oil over hens and season with salt, pepper and Tuscan seasoning.
  2. Stuff cavities with clementines, thyme and shallots.
  3. Roast at 450°F for 25 minutes, add wine and cook for another 15 minutes, basting often, until internal temperature reaches 165°F.
  4. Let rest 10 minutes before serving.
