Roasted Artichokes

Instructions
  1. Trim top of artichoke off, about 2 inches. Trim stem end so artichoke sits flat. Trim dark leaves around the bottom and sharp points on leaves.
  2. Gently pull back the leaves and wash. Place artichoke top down on counter to allow water to drain.
  3. Place garlic slices between some of the leaves of each artichoke. Use 2-4 garlic cloves per head depending on size of artichoke.
  4. Drizzle Farm Boy™ Extra Virgin Olive Oil on a piece of aluminum foil. Place one artichoke stem side down on the foil and drizzle it with olive oil, balsamic vinegar, juice of half a lime, salt and pepper.
  5. Wrap artichoke up tightly so it is fully covered. Repeat with remaining artichokes.
  6. Place artichokes in baking dish and bake at 350°F for 1h 15 min or until done.
  7. When artichokes are done place in bowl and drizzle cooking liquids over artichoke and use Farm Boy™ Chipotle Mayonnaise as a dip. Try changing olive oil and balsamic flavours. Nutty flavours work well.
