Roasted Acorn Squash Bowls

  1. Preheat oven to 375◦F.
  2. Line a small baking sheet with parchment paper.
  3. Cut acorn squash in half and scoop out seeds. Place squash halves flesh side down on baking sheet and bake until flesh softens (approx. 40-45 minutes for a large squash).
  4. Prepare filling while the squash is baking. Dice onion and apple into small pieces. In a large skillet on medium heat, cook onions until soft and translucent. Add diced apple to skillet and cook until soft (approx. 5-10 minutes). Transfer to medium mixing bowl. Return skillet to heat, adding ground beef. Brown meat and drain excess fat, if desired. Add remaining ingredients and toss to combine. Add meat mixture to the bowl of onions/apples. Stir to combine.
  5. When squash has finished baking, scoop out some flesh to create room for filling. Add excess squash to the meat/onion/apple bowl, mix and then scoop into squash "bowls". Garnish with fresh herbs.
